Creamy coconut pasta

Hello.. My dear lovely people, how are you all doing? I know it’s pretty challenging times now and I am sure by the end of this times we all will become a bit more stronger than before, bit more compassionate towards ourselves and everyone around us, bit more responsible towards our nature and planet, bit more fun and loving in our very own crazy way, bit more appreciative of every little thing we have now, and bit more creative than ever before :P.

There is possibility for us to become creative in every damn thing we do and so I want you to know that I lately became so creative in my kitchen and created this yummy and simple pasta recipe that for sure will make you, your friends and your kids fall in love with. So.. here we go… welcome to my unconventional cooking ;).

Ingredients:

Get ready for the subtle explosion of all the goodness in the vegetables and coconut cream

Garlic – 2 cloves (finely chopped)

Onion – one large (finely chopped)

Oil – 3 tablespoons

Capsicum – one large (finely diced)

Carrot-  one large or 2 medium (finely diced)

Green peas and corn – a fist full or may be more if you like

Coconut cream – 250 ml

Pasta –  250 grams

Salt – a teaspoon

Turmeric – half a teaspoon

Green chilli – 3

Procedure:

Firstly, turn on some music and get on to your favorite moves yay yay.. Cooking should be fun, so play some music that you enjoy.. That’s it move it move it ;). The energy that you cook with is the energy you are going to feed your family so.. Don’t hesitate to turn on some music :P.

Okay… now,

Take delicious steps to nourish your body :p

Firstly, take a pan with a slightly round bottom and put it on your stove, add oil to it and once the oil gets heated add finely chopped garlic to it and let it turn into a slightly golden colour ( what ?? garlic didn’t turn into golden colour?? Hmm turn on the damn stove people, put it on a medium flame 😉 :)) phew crazy me). Once the garlic turns into slightly golden colour add finely chopped onions to it. Adding little salt to the onions help to cook it slightly faster so don’t feel free to add more ;). If you see that the onions are sticking to the pan , sprinkle some water on to the pan and stir them a bit. After 5 minutes add the finely chopped capsicum and chili pepper into the pan along with some turmeric and let it cook for another 3 -4 minutes with the lid closed. Open the lid and see if the capsicum is nicely cooked( not mashed). Add diced carrots to it and stir it a bit and close the lid for another 4 to 5 minutes and add green peas and corn to it. After 3 to 4 minutes, open the lid and mix it well adding coconut cream to it ( it already smells and tastes yum.. You can eat  it as it is, I mean of course you will have to wait until it cools down a bit :P).  Add cooked pasta to it and mix it well such that the pasta is coated with the creamy coconut sauce and all the yummy flavors. Put the lid on, let it simmer for an additional 3 minutes and turn off the stove.

Hurray!!! yummm!!! was the response from my little one 🙂

Serve it on to your plates and enjoy the creamy yummy pasta with your family and friends.. 

Wait!! What’s that on your kitchen walls?? Creamy coconut pasta all over the wallpaper?? Put the damn spoon on the kitchen counter before doing some heavy moves… you people.. Crazy people!! Ufff!! 😉
